Put all the flour and yeast in a bowl and mix everything together. Add the water, soft butter or margarine and egg. Knead it in a stand mixer or a hand-held mixer first 2 minutes slowly and then 8 minutes quickly. Let it rest for about 10 minutes at room temperature. Divide the dough into 16 equal pieces (about 50g), work around and place with the seam down on a lightly floured towel. Press the Berlin Donut slightly and let it rest covered for approx. 60 to 90 minutes until the dough has clearly increased in volume. Heat the vegetable fat to 170°C in a fryer, pan, or flat pan. Put the Berlin Donut into the hot fat bath and first bake for 2 ½ minutes with the lid closed on each side. Then bake with lid open for 1 minute from each side. Drain the finished Berlin Donuts on a paper towel (kitchen paper), fill as desired and decorate either immediately with sugar or after cooling with glazes and sprinkles.
